Velvet is not a restaurant — it is a ritual. Chef Gabriel Santos creates tasting menus that evolve with the seasons, sourcing only from a curated network of British farms, fishermen, and foragers.

Each of the 24 seats is a front-row seat to the kitchen. No à la carte. No shortcuts. Only a single, perfect menu, served in complete silence until service begins.
