Born in Porto, Gabriel trained under three Michelin-starred chefs across Paris, Copenhagen, and Tokyo before returning to London to open Velvet in 2018. His philosophy is simple: obsession over everything.
Today, Velvet holds two Michelin stars and is ranked among the UK's top five restaurants. The kitchen team of twelve serves only 24 covers per sitting — a deliberate choice to preserve intimacy and perfectionism.
